Paleo Fried Shrimp…It’s legit!

Way before I began the Paleo Journey, I've always been a fan of Fried Shrimp. I know, not the healthiest of foods, right? As I was looking for something to prepare, I know I wanted shrimp, but I wasn't in the mood for Coconut Shrimp tonight. Instead I wanted Fried Shrimp. Is it possible to still make this healthier and Paleo? Of course you can! Luckily, I had some Almond Meal and Coconut Flour, and the rest was history.

Delicious, filling, and quick. Give it up for…

Almond Meal Shrimp

Ingredients:

– 1 pound of shrimp

– 2 cage free eggs

– 1 cup almond meal (mix some seasoning [21 Seasoning Salute from Trader Joe's] for extra flavor)

– 1 cup coconut flour

– 2 cups Extra Virgin Olive Oil

Prep Time: approx 20 minutes

1.) Heat the oil at medium high heat in a deep frying pan.

2.) Peel and devein the shrimp (keep the tails on).

3.) Whisk the eggs in a bowl and set aside.

4.) Make sure the almond meal and coconut flour are each on a flat surface or a plate.

5.) Pat each shrimp to remove excess moisture.

6.) Take a shrimp, coat it with in coconut flour, then dip it in the egg, and then dip it in the almond meal.

7.) Once all of the shrimps are prepared, check to see if the oil is heated properly. You can check this by flicking a tiny bit of the whisked egg into the oil. The egg should float to the top right away. When ready, slowly add the shrimp one at a time.

8.) Fry the shrimp for about 2 minutes on each side or until browned.

9.) Remove the shrimp and let it cool on a rack or a plate with a napkin to soak up the excess oil.

10) Serve w/ your favorite fruits and vegetables.

    Great recipe Theo! Going to have to give a try. Although I wouldn’t recommend frying with Extra virgin olive oil, it doesn’t have a high heat tolerance.

    OK, my food has taken a complete downward spiral since Saturday night, so as embarrasing as it is, I’m gonna post for a few days to get back into Paleo-World! Today:
    9am — 2 eggs, 1/2 cup eggwhites, 1 tbsp olive oil, 6 oz strawberries (~6 large)
    1pm — 4 oz cornbeef, 3 oz sweet potato, 4 oz tomatoes, 3 oz dry-roasted almonds
    2pm — vente decaf iced americano with 2 Equals and ~1/2 cup whole milk; a WHOLE BAR 84% chocolate snacked on all afternoon!
    4pm — 2 oz roast beef, 4 oz yellow bell pepper
    Dinner plans: 5 oz chicken, bunch of veggies (probably chard from my landlady’s garden), large salad, 1 tbsp flax oil & balsamic
    Get my butt to CF, too!

    I need to do more research on better frying oils. LOL.
